What is the shelf life of Ember Farms sausage? |

Most products can be stored frozen for 8 months. Four days under refrigeration.

What is the proper way to reheat Ember Farms sausage? |
| A. |
Reheat our sausage to an internal temperature of 165° F for a minimum of 15 seconds by any of the following methods: flat grill, conventional oven, convection oven, or steamer. A microwave may also be used. (Microwave is not recommended for our turkey products.)

What is the proper way to hold Ember Farms sausage? |

To hold Ember Farms hot, it is very important to maintain the food temperature above 140° F by any of the following means: steam table, chafing dish, double boiler or heated cabinet. Also, please maintain the following: measure the internal food temperature at least every two hours, discard hot foods after four hours if they have not been held at or above 140° F. If held above 140° F for four hours, the hot foods need to be cooled to 40° F or below. To hold cold product, temperature must be maintained at 40° F or below.

Should I reheat Ember Farms sausage from a thawed or frozen state? |

We recommend reheating from a thawed state. Ember Farms products may be reheated from a frozen state, but the process will take longer.

Proper thawing is an important step in preserving food quality and food safety. We recommend placing the frozen sausage in the refrigerator overnight where cool air can circulate.
